Spring Vegetable Salad With Maqui Berry Dressing

Infused with the goodness of Maqui Berry, this is no ordinary vinaigrette! This superfood salad dressing is loaded with flavour, and most importantly, health benefits. It's quick, simple and a seasonal favourite!

Serves: 1



  • 50 g mixed frozen berries
  • 3 large strawberries
  • 1 tbsp rapeseed oil
  • 1 Sea salt and pepper to taste
  • 1 tsp Maqui Berry Powder
  • 1 tbsp honey
  • 1 Large handful of rocket
  • 1 clove garlic
  • 50 fresh asparagus
  • 80 g courgette
  • 1 Small handful walnuts
  • 1 Handful fresh strawberries
  • 20 g Feta cheese


#1 Place the berries, rapeseed oil, berry powder and honey into a blender and whizz everything up until completely smooth and creamy

#2 Season to taste with salt and pepper and set aside

#3 Chop the asparagus into thirds and slice the courgette. Heat a little oil in a frying pan and add the veggies. Crush in the garlic clove and season with salt and pepper

#4 Cook the vegetables until tender and slightly crisp on the outside

#5 To assemble the salad, layer the fresh rocket and cooked vegetables onto your serving plate

#6 Crumble over the walnuts and feta and scatter sliced strawberries

#7 Finish with a drizzle of the berry dressing and serve
