Your chicken and rice meal prep just got a serious upgrade.

Need another meal prep recipe to spice up your weekly routine? This is it and then some. Packed with protein, loaded with irresistible flavour and ready in under half an hour, it ticks every box in my opinion.

The sticky sauce is oh-so moreish, with plenty of zingy, sweet and sour taste that’ll satisfy your takeaway cravings in an instant. Give it a go tonight and you’ll be set for a great day tomorrow, trust me.

Serves 2

Ingredients

  • 300 g chicken breast (diced)
  • 3 tbsp. cornflour
  • 2-3 spring onions (chopped)
For the marinade:
  • 1 tsp. sesame oil
  • 1 tbsp. light soy sauce
  • 1 tsp. garlic (grated)
For the sauce:
  • 2 tbsp. honey
  • 2 tbsp. light soy sauce
  • 2 tbsp. ketchup
  • 1 tbsp. sesame oil
  • 1 tbsp. white rice vinegar
To serve (optional):
  • Sesame seeds
  • Chives (finely chopped)
  • Rice
  • Edamame beans

Instructions

1.

First, place the diced chicken in a bowl with the marinade ingredients. Mix well to coat everything evenly, then set aside for 15 minutes.

2.

In the meantime, prepare the sticky sauce by adding the honey, light soy sauce, ketchup, sesame, and white rice vinegar to a small bowl. Mix well, then set aside.

3.

Next, add the cornflour to the marinated chicken and mix until well-coated. Put the chicken pieces in the air fryer for 10-12 minutes until cooked through and crispy on the outside. Halfway through cooking, take the chicken pieces out of the air fryer and give them a toss.

4.

Heat the sticky sauce in a pan until it starts to bubble. Add the cooked chicken pieces and chopped spring onions to the pan and stir to coat everything well.

5.

Serve immediately with a sprinkle of sesame seeds and chopped chives to garnish. Make it a meal with a side of rice and edamame beans.
