Ingredients

  • 300g watermelon (diced)
  • 120g light feta (cubed)
  • 10g fresh pine nuts
  • Fresh mint
For the dressing:
  • 5g honey
  • Salt and pepper to taste
  • Lemon juice

Instructions

  1. First, add the diced watermelon and feta into a large mixing bowl and gently mix to combine.

  2. Sprinkle with fresh mint leaves and then set aside.

  3. Now make your dressing by adding the honey, lemon juice, salt, and pepper to a small bowl and mixing well.

  4. Drizzle the dressing over the ingredients in the salad bowl, and then top with a handful of pine nuts.

  5. Enjoy immediately or portion up into containers for a refreshing lunch on-the-go.

Absolutely, if you need — it’s a great time saver. But that said, you can’t beat fresh cut watermelon.
