This sizzling flatbread recipe is the perfect quick lunch for a meat-free Monday.

Made in a matter of minutes, this is such a shout for working-from-home lunches where you just need something to hit the spot. There's no denying that halloumi is a top tier cheese and it’s even better with a deliciously sweet & sticky chilli-honey glaze.

Why not enjoy a little taste of the Med while you wait for summer to properly arrive?

Hot Honey Halloumi Flatbread

Ingredients

  • 1 Flatbread
  • 80 grams Halloumi (sliced)
  • 25 grams Honey
  • 1/2 teaspoon Chilli flakes
  • 20 grams Hummus
  • 1/2 Lemon
  • Handful Rocket leaves
  • Handful Cherry tomatoes

Instructions

Add the honey, chilli flakes, and the juice of half a lemon to a small bowl and stir to combine.

Next, heat a little low-calorie cooking spray in a non-stick pan and add your halloumi slices. Drizzle with the chilli-honey mixture and cook for a few minutes on each side until golden brown.  

3.

Meanwhile, toast your flatbread and spread generously with hummus. Add some rocket leaves, chopped cherry tomatoes, and finally the cooked, crispy halloumi slices. Dig in!
