Banana And Blueberry Oat Bars Recipe

Skip the early-morning coffee shop rush by baking your own banana and blueberry oat bars!

Perfect for breakfast or an afternoon treat, these delicacies are low in fat, sugar and absolutely delicious!

Ingredients

  • 1 banana
  • 125 g Rolled Oats
  • 1 tbsp Sugar-Free Syrup (Maple Flavour)
  • 1 tbsp sunflower seeds
  • 20 g desiccated coconut
  • 1 Dash of vanilla extract
  • 1 handful of blueberries

Method

#1 Preheat your oven to 180c and line a baking dish with grease proof paper

#2 Mash the banana with the back of a fork and gently melt the peanut butter and syrup of choice together. Stir these into the banana mix and add in a dash of vanilla

#3 Combine all of the dry ingredients in a mixing bowl (apart from the blueberries) and pour over the wet ingredients. Mix well so that all of the oats are evenly coated and start to stick together

#4 Gently stir through the blueberries and pop the mixture into the baking dish, making sure to flatten everything down

#5 Cook these in the oven for around 15 minutes then leave to cool completely before slicing into bars
