This one tray bake is perfect for quick simple meal prep in under 30 minutes.Baking the sweet potatoes on the same tray as the burgers allows them to soak up the tasty meat juices adding to the succulent flavour along with the earthy mixed salad and asparagus - it’s a great flavour combination!

MACROS PER MEAL

Calories: 475     Protein: 36g      Fat: 31g      Carbs: 32g

Ingredients

  450g Turkey Mince

30g Rolled Oats

2 Tbs Coconpure Coconut Oil

1 Small Onion (Diced)

2 large Sweet Potato

1 Tbs Garlic Powder

150g Asparagus

Mixed Salad Bag

1 Egg

Method

 

  1. Preheat the oven to 165oC
  2. To a mixed bowl add the turkey mince, diced onion, egg, rolled oats, salt and pepper
  3. Mix everything together until well combined split into 3 pieces and roll into balls
  4. Wash the sweet potato and cut off both ends and slice each on into 3 wedges
  5. To a baking tray add the coconut oil and rub all over
  6. Place the sweet potato slices on the tray and sprinkle with paprika, salt and pepper
  7. On a different tray place the turkey balls and press them down to the same thickness as the sweet potato slices
  8. Cook in the oven for 25 mins until golden brown
  9. While these are cooking boil the kettle and pour over the asparagus, cook in the microwave for 4 mins
  10. Once everything is cooked, separate into 3 boxes and finish with mixed salad
