Ingredients
450g Turkey Mince
30g
2 Tbs
1 Small Onion (Diced)
2 large Sweet Potato
1 Tbs Garlic Powder
150g Asparagus
Mixed Salad Bag
1 Egg
Method
- Preheat the oven to 165oC
- To a mixed bowl add the turkey mince, diced onion, egg, rolled oats, salt and pepper
- Mix everything together until well combined split into 3 pieces and roll into balls
- Wash the sweet potato and cut off both ends and slice each on into 3 wedges
- To a baking tray add the coconut oil and rub all over
- Place the sweet potato slices on the tray and sprinkle with paprika, salt and pepper
- On a different tray place the turkey balls and press them down to the same thickness as the sweet potato slices
- Cook in the oven for 25 mins until golden brown
- While these are cooking boil the kettle and pour over the asparagus, cook in the microwave for 4 mins
- Once everything is cooked, separate into 3 boxes and finish with mixed salad
