An easy no-bake recipe that keeps in the fridge for you to enjoy whenever you need that sugar hit — it doesn’t get much better than @elmint’s version of rocky road. 

She combines coffee and caramel with marshmallows, biscuits and raisins to make the ultimate chocolatey bite. 

Ingredients

Instructions

1.

Place the digestive biscuits in a zip-seal freezer bag or similar and bash with a rolling pin. Mix up the size of the biscuit chunks for a great texture — some biscuits should be crushed to roughly the size of a 50p coin and some crumbled to dust.   

2.

Add the dark chocolate and coconut oil to a heatproof bowl over a pan of boiling water and stir until completely melted and smooth.  

3.

Add the crushed biscuits, raisins, and mini marshmallows to the chocolate. Stir everything together until combined, then transfer to a lined baking tray and flatten with the back of your spoon. 

4.

Cut up your Coffee Caramel Layered Bar to decorate and then chill in the fridge overnight.  

5.

Slice up and enjoy immediately or store in the fridge for up to 3 days. These are perfect to have on hand to satisfy chocolate cravings at any time of the day.
