Who said salads have to be boring?

This chicken & bacon salad comes with a heavy load of delicious ingredients and a massive macro boost for your daily bulking targets. An irresistible combination of crisp lettuce , creamy avo, crunchy onion, juicy tomato, and, of course, sizzling bacon – it’s big on flavour, that’s for sure.

It’s ideal for mixing up your usual meal prep routine, without sacrificing on what counts. And yes, I mean calories.

Servings: Serves 1

Ingredients

  • 2 chicken breasts
  • 4 bacon slices
  • 1 large avocado
  • 28g mild cheddar
  • 1 small gem lettuce
  • 1/2 onion
  • 1/2 tomato
  • 4tbsp. Caesar salad dressing

Instructions

  1. First, prep the cold ingredients – chop up your pre-cooked chicken breasts, large avocado, gem lettuce, and tomato into small pieces. Slice the onion and then add everything to a large bowl.

  2. Cut up your bacon slices into small strips or cubes (whichever you prefer) and then fry over a medium heat until nice and crispy.

  3. Add the cooked bacon to the rest of the salad ingredients, along with a healthy dollop of Caesar salad dressing and give everything a good ol’ mix to combine. Get stuck in.
