Autumn Spiced Protein Granola is a great addition to your breakfast cupboard! with the health benefits from the omega seed mix and kamut flour along with the slow releasing instant oats and nuts, this is not only a wholesome meal but tastes like winter in a bowl. Oh did I forget to mention unlike the majority of other sugary breakfast cereals it only has 1g sugar and to top it all off you have the bragging rights, you make your own Granola!!!

Add the instant oats, kamut flour, Impact Whey Protein, granulated sweetener, all spice and cinnamon to a bowl and mix them together.

In another bowl, melt the coconut oil in the microwave for a few seconds. Once it has cooled, add the almond butter and eggs, and whisk together.

3.

Pour this over the dry ingredients in the other bowl and rub together with your fingertips until all is combined and has made large lumps of dough. It should still be quite moist.

Chop all the nuts and coconut into small, similarly-sized pieces. Mix all of this in with the granola nougats then add the omega seed mix.

5.

Stir all together and squeeze the nuts and seeds into the granola nougats.

Lay the mixture evenly on a baking tray. This is your chance to make the granola pieces whatever size you like. If you like them bigger,  squeeze more together on the tray, if you like finer granola, sprinkle them more thinly.

7.

Turn the oven to 160°C, put the tray in the middle of the oven and cook for 40 minutes.

8.

Before removing from the oven, check the granola feels crunchy. If it still feels soft, put it back in.

9.

Once crunchy, remove from the oven and leave to air dry (do not cover).

Once cooled, it can be stored in an air tight container for 4 weeks.
