Try our Sweet Quinoa Mini Muffins - they are incredibly easy to make and even use up old bananas and store cupboard ingredients!
They can be eaten cold on the go or warm served with natural Greek yogurt and cinnamon... give them a try!

- 50 g Uncooked Quinoa
- 1 tbs Honey
- 1 Old Banana
- 5 g Cocoa Nibs (Optional)
- 30 g Crunchy Peanut Butter
- 1 tbs Stevia (Optional)
- ½ tsp Ground Cinnamon (Optional)
Method
a) Firstly start by cooking the quinoa and adding 1 table spoon of sweetener to the water
b) Mash the banana with a fork and add the honey
c) Once the quinoa is cooked (while still warm) mix all ingredients together and spoon the mixture into silicone muffin trays and place in the oven on 180°C for 12 minutes to allow a golden crust to form on the top
This recipe will make 8 mini muffins or 4 large muffins and can be frozen for 3 months or kept in the fridge for 3 days
