A satisfying twist on a classic salad.

This incredible lunch is just the thing if you’re after something fresh and healthy, but want something a little more substantial than your typical salad. You can have all the best bits of a chicken caesar, wrapped up in a delicious, toasted pitta. Incredible, right?

The air-fried crispy Parma ham bits are a personal highlight. You really should give this a go ASAP.

Chicken Caesar Salad Pitta

Serves 1

Ingredients

  • 1 slice Parma ham
  • 80-100 g cooked chicken breast (shredded)
  • 1 tbsp. thick natural yoghurt
  • 1 dash Worcestershire sauce
  • 1 spring onion (chopped)
  • 2 anchovies (finely chopped)
  • 1 tbsp. lemon juice
  • 1 tsp. lemon zest
  • 10 g grated parmesan
  • Pinch black pepper
  • 1 wholemeal pitta
  • Handful little gem lettuce

Instructions

1.

First, in an air fryer or dry frying pan, crisp the Parma ham until golden (around 3-4 minutes). Allow to cool on a kitchen towel, then roughly chop and set aside.

Next, add the shredded cooked chicken breast to a bowl. Mix with the yoghurt, a few dashes of Worcestershire sauce, chopped chives (or spring onions), 2 finely chopped anchovies, lemon juice, lemon zest, grated parmesan, and some black pepper. Taste and adjust to your preference.

Now toast the pitta, cut in half and open. (Be careful not to burn your hands.) Stuff with some leaves of little gem lettuce and then spoon in the chicken caesar filling. Top with pieces of crispy ham and some extra chives.

4.

Enjoy immediately or store in a container to take with you on the go.
