Zucchini Pizza

 

If pizzas one of your favorite meals you’ve had to cut down on we’ve got the perfect vegetarian alternative for you! This zucchini pizza recipe is amazing and tastes so fresh!

 

Ingredients

 

To get started on your zucchini crust pizza here’s a bunch of ingredients you’ll need:

 

The base:

1 whole zucchini/courgette

2 and a half scoops of Myprotein total grains

1 tsp oregano

1 tsp of garlic powder/salt

1 egg

 

The Topping:

½  can drained chopped tomatoes

1 small onion

A handful of spinach

2 mushrooms

2 tablespoons of tomato puree

A dash of olive oil

1 large garlic clove

1 tsp of Italian seasoning

fresh basil leaves

A handful of low fat cheese

Preparation

 

Step One

 

Preheat your oven to 180 – 200 degrees Celsius.

Grate your zucchini and add to a food processor. Blend to chop the zucchini even more finely.

Place your zucchini in a microwavable bowl for 5 minutes.

Step Two

 

Remove your chopped zucchini from the microwave and allow to cool.

While cooling, start your sauce by chopping all your sauce vegetables.

Fry your sauce vegetables and stir in the tomato puree and chopped tomatoes.

Step Three

 

Once cool add garlic salt, seasonings, an egg and 2 ½ scoops of Myprotein total grains to your cooked zucchini.

Mix well until a stick dough is formed.

Step 4

 

This mix should make two small pizzas, place the dough onto baking trays and shape into round pizza bases.

The Cooking

 

Place your bases in the oven for 18-20 minutes.

Remove and add your sauce topping. Sprinkle with cheese and place back into the oven for a further ten minutes.

Remove your pizzas from the oven and enjoy!!
