Cranberry and Dark Chocolate Protein Bars

These dense, fudge-like Vegan protein bars are a welcome break from the usual post-workout shake.

With over 22 grams of dairy-free protein per serving, these hefty bars also pack the nutritional punch of fibre-rich cranberries, healthy fats from nut butter and an antioxidant boost in the form of rich, dark chocolate!

 

Ingredients

 

– 135g of Myprotein instant oats

 

– 115g of Myprotein cashew butter

 

– 160g of Myprotein Soy Protein Isolate powder in Strawberry Cream

 

– 50g of Myprotein dried cranberries

 

– 320ml of almond milk

 

– 8 squares of dark chocolate (at least 70% cocoa)

 

 

Method

 

The process is surprisingly simple!

 

1) Blend your ingredients (minus the chocolate) using a spoon and some elbow grease until thoroughly combined.

 

2) Place the mixture in a shallow square baking tin lined with cling film (8×8″ works great) and flatten mixture with the back of a spoon.

 

3) Cover and leave in the fridge overnight.

 

4) In the morning, cut into 8 pieces and top each with a square of chocolate. Store in the fridge.
