Need a light healthy lunch idea? Sick of the same meal prep?

 

Why not try this super simple lentil salad! Lentils are a kind of pulse that are high in protein and have been shown to lower cholesterol,  stabilise blood sugar, help digestion and increase energy levels and weight loss.

 

Ingredients

 

Here’s what you’ll need:

 

½ a red bell pepper

Cucumber

Mini plum tomatoes

Round lettuce

Spinach

Rocket

20g of red lentils

20g of green lentils

1 teaspoon of Apple cider vinegar

Lemon Juice

Pepper

 

Lentil Salad

 

Preparation

 

Step One

 

In a pan cook your lentils as directed- usually ten minutes in boiling water.

 

Step Two

 

Chop your pepper, tomatoes, cucumber and lettuce.

In a bowl combime all your salad ingredients and add lemon, pepper and apple cider vinegar- mix well.

 

Step 3

 

Mix in your lentils and enjoy this super light lunch- perfect for when you’re trying to lose weight.
