✓ 2 fresh salmon fillets (about 230g) – lightly smoked salmon fillets work really well here
✓ 1/3 red pepper
✓ 1/4 red onion
✓ 1 clove garlic
✓ Sea salt and black pepper
✓ 1/4 red chilli
✓ Handful of fresh coriander
✓ 1 Tbsp. fresh lime juice
✓ 2 Tbsp. Buckwheat Flour
✓Avocado & coriander to garnish
#1 Preheat your oven to 180c
#2 Finely dice the red onion, chilli and pepper into small pieces and add these into your food processor, along with the two salmon fillets
#3 Crush in the garlic clove and season with sea salt, black pepper and the lime juice
#4 Gently pulse the mixture for a few seconds until everything is well combined in a sort of ‘mince’ texture, but not completely blended and smooth
#5 Mix through the buckwheat flour and mould the mixture into 4 burger patties
#6 Place these onto a baking tray and cook in the oven for around 16 minutes or until cooked to your liking
#7 Serve topped with some sliced avocado and salad/green veggies.
