Paella is one of my favourite Spanish dishes that Is one of the first on the list to be ordered in any tapas restaurant. But the dread oils and rice can often be a set back on training so unless it’s cheat meal time- paella is off the menu.
But wait!- This healthy quinoa Paella recipe can be enjoyed anytime in the week and can even become part of your usual meal prep! And trust me- it’s delicious!
Instead of rice this recipe uses quinoa which offers less carbohydrates and a greater serving of protein! Here’s what you’ll need:
35g of uncooked quinoa
½ a yellow pepper
½ a red pepper
2 cloves of garlic
½ a tin of chopped tomatoes
1 tablespoon of tomato puree
Handful of spinach
100g of raw King prawns
2 chicken breasts
Start by cooking 35g of quinoa as directed (usually involves boiling for ten-15 minutes).
Slice your chicken and vegetables.
In a frying pan begin to cook your chicken breast (use half a teaspoon of coconut or olive oil if necessary). After 5 minutes add in all your vegetable except the chopped tomatoes.
Once the vegetables and chicken are nearly cooked 7-10 minutes, add your chopped tomatoes, tomato puree, seasonings and king prawns. It should only take about 2 minutes for your prawns to cook and turn pink.
Stir in your quinoa and spinach, serve and enjoy!
