Protein Pear Cupcakes
So on Saturday I noticed two lonely ripe pears sitting in the fruit bowl. Most people’s first thoughts are bin, bin bin! But whenever I see ripe fruit “protein treats” is what comes to mind!
Mashed ripe fruit can almost be thought of as a glue in protein baking- it holds all the ingredients together, whilst providing a natural source of sweetness and sugar.
If you like pears- don’t let the odd ripe one go to waste, try these protein pear cup cakes- which can be made into one single loaf cake.
Here’s what you’ll need:
2 ripe conference pears
2 scoops of Myprotein vanilla whey protein
2 tablespoons of cocoa powder
1 large egg white
1 scoop of Myprotein instant oats
1 tablespoon of quark (can be substituted for yoghurt)
Preheat your oven to 175 degrees Celsius.
In a blender/ food processor combine all your ingredients- except the chocolate chips. You can peal your pears for best results or leave the skin on for added fibre.
Blend for around 1 minute on full speed. Stir in the chocolate chips.
Pour the Mixture into cup cake cases and leave to bake in the oven for around 30 minutes.
When you remove the cakes they may look a bit soft- but once left to cool for around 45 minutes the mixture will set.
