Low-Calorie Spaghetti & Spicy Thai Meatballs


This recipe is the perfect high-protein meal for two to share on Valentine’s Day, not to mention it is low-carb! An exciting new twist on the classic Lady and the Tramp spaghetti and meatballs, using Myspaghetti konjac pasta at only 7 kcals per serving and a tantalising Thai red curry sauce, this recipe is great for anyone looking to up their daily protein intake whilst keeping their carbs low.


For The Sauce:

2 Cloves Garlic (finely chopped)

½ Thumb Root Ginger (grated)

1 tbsp. Thai Red Curry Paste

200 ml Low-fat Coconut Milk

2 tbsp. Myprotein Cashew Butter

1 tsp. Rapeseed Oil For Frying


For The Meatballs:

200g Lean Pork Mince (or any mince of your choice)

1 Large Egg Yolk

1 Slice Of Stale Bread – Blended Into Breadcrumbs

1 Green Chilli (finely chopped)


For The Pasta:

2 x 200g  Myspaghetti Konjac Pasta


Step 1: Meatballs

#1 Combine the mince pork, egg yolk, breadcrumbs and green chilli in a mixing bowl, and then roll the mixture into 12 meatballs

#2 Pour the oil into a large frying pan and fry the meatballs for around 10 minutes until all sides have browned.


Step 2: Sauce

#1 Whilst your meatballs are cooking, combine garlic and ginger in a large saucepan and place on a medium heat for 5 minutes or until the onions start to turn golden brown

#2 Next, add the Thai red curry paste and stir for around a minute

#3 Then turn the heat to high and add your coconut milk and Myprotein Cashew Butter and let it cook for around 5 minutes, stirring occasionally

#4 Next, add the meatballs to the mixture, turn the heat down to medium and cook for a further 10 minutes

#5 Whilst you’re waiting, cook your Myspaghetti – drain the liquid, rinse it under cold water and cook for 1 minute in the microwave or 2-3 minutes in a pan

#6 Sprinkle the sliced spring onions over and serve!
