Our delicious stuffed pepper recipe is a simple, yet tasty accompaniment for a main meal or a quick snack that can be warmed in the microwave.
This meal combines a great source of complex carbs with plant-based protein and will last for a good few days in the fridge!
Serves 1: Multiply these ingredients by however many stuffed peppers you would like!
– 1 Red Pepper
– 1 Can of mixed beans
– 1 tbsp Olive Oil
– 1 Egg (optional)
1) Cut the pepper in half leaving the steam on and deseed
2) Bring a pan to the boil add salt and place the pepper in the pan for 5-7 minutes
3) Open the can of beans – drain and pour into the middle of the pepper.
4) Add salt, pepper and a drizzle of olive oil then bake in the oven for 15-20 minutes
(You can also add an egg to the middle of the pepper along with the beans, it’s a delicious combination and holds it together for an on-the-go snack!)
