Enjoy this leftovers frittata recipe using any leftover vegetables after a roast dinner!
It can be served warm or cold and it a great portable snack or addition to your evening meal with, for example, chicken and salad.
1) 3 Medium Eggs – Whole (Alternative- 4 egg whites)
2) 50ml – Skimmed Milk (Alternative – Almond milk)
3) 3 slices Wafer thin ham
4) 60g New Potatoes
5) 40g Cooked carrot and swede
6) 50g Broccoli
7) 1 cup Spinach
a) Whisk the eggs and milk together and pour into a hot frying pan sprayed with 1 Cal spray. Once egg mixture is in, turn the heat down to low
b) Evenly sprinkle all the leftover mixed vegetables and meat, cook on the hob for 10 minutes then finish off under the grill for 3 minutes
c) Once cooled it can be stored in the fridge for up to 2 days
