Mini Egg White Muffins
Looking for a healthy breakfast or even just a quick high protein snack? – If your looking for a savoury snack or a way to mix up your usual breakfast routine, try these eggcellent egg muffins! These Mini Egg White Muffins are super tasty and super easy to make!
You can make this recipe your own by adding your favourite seasoning and vegetable ingredients- but here’s the basics you’ll need:
3 egg whites
Half a red onion
3 broccoli florets
50g of white cabbage
30g of sweetcorn
Salt and pepper
A muffin tray
These egg muffins are so easy to make and only require 15 to 20 minutes in the oven!
Start by preheating your oven to 180- 200 degrees celcius.
Chop your onion, broccoli, and cabbage into small fine pieces.
To a muffin tray add you’re chopped up vegetables.
Using your favourite Myprotein shaker whisk together your 2 whole eggs and 3 egg whites and carefully pour your whisked egg mixture into your muffin tin.
Place in the oven for 15- 20 minutes, remove and enjoy!
