Corn Tortillas and Nandos Style Hot Sauce

Our delicious Corn Tortillas and Nandos Style Hot Sauce is a simple and quick snack that can be made and kept in the fridge as and when required!

 

Ingredients

 

 

– 2 cups – Masa Harina Corn Flour

 

– 2 cups – Warm Water

 

– Salt and Pepper

 

 

Method

 

 

a) Add the two cups of flour, salt and pepper to a bowl and start adding the water a drop at a time until it makes a soft dough ball, If the mix is too stiff or crumbly add more water and if it’s too sloppy add more flour

 

b) Roll into a sausage shape and cut into 8 pieces

 

c) Roll each piece into a ball and place on some clingfilm underneath and over the top then take a heavy based pan and squash into a flat circle around 5mm thick

 

d) Carefully peal the top layer of clingfilm off and drop into a dry frying pan (discarding the second piece if clingfilm) on a medium heat (if it splits gently press back together)

 

e) Cook for 2 minutes on either side they will not be golden if you cook them until they change colour they will be too hard

 

f) Cook what you need and leave the others raw in the fridge until needed (they will last upto 5-7 days)

Hot Sauce Ingredients

 

5 – Chillies

 

1 – Garlic Clove

 

1 – Small Red Onion

 

1 Tbs – Honey

 

1 Tsp – sunflower oil

 

Salt and Pepper

 

 

Method

 

a) Chop all ingredients into similar sized pieces put in a pan with the oil on a medium heat place on a lid for 10 minutes allowing the veg to sweat

 

b) Once the all ingredients are semi soft whizz with a hand blender or pour into a food processor and blend until smooth

 

c) Pour into a sterilized jar and store in the fridge this recipe will last for 2-3 weeks
