✓ 360g baby red potatoes ✓ 1 heaped tsp. Coconut Oil ✓ Sea salt and pepper ✓ Dried mixed herbs
#1 Preheat your oven to 200°C or 180°C for fan-assisted
#2 Peel your potatoes and chop them into small bite-sized chunks and place them onto a baking tray
#3 Gently melt your coconut oil in a pan and pour this over the potatoes. Season generously with the mixed herbs, salt and pepper and massage everything over the potatoes so that they’re roughly evenly coated
#4 Roast these in the oven for around 40 minutes or until they’re nice and crispy
