Ratatouille Sauce

 

Lite Ratatouille Sauce

 

Ingredients for Ratatouille Sauce:

 

Aubergine – 100 g

Tomatoes – 182 grams

Large White Onion, 75 g

Garlic – Raw, 3 cloves

Courgette, 100 g

Baby Sweetcorn, 100 g

Passata 50 g

Red Pepper x1

Green Pepper x1

Yellow Pepper x1

Spices – Salt, table,

1 tsp Spices – Pepper, white,

1 tsp Spices – Smoked Paprika,

1 tbsp (6g) Sunflower Oil

Method

Firstly cut all the vegetables besides the tomatoes into similar sized pieces and add oil to the pan and simmer with a lid on for 10 minutes on a medium heat.

Next add the salt, pepper, paprika and put the tomatoes cut into halves on top of the vegetables, put the lid back on and continue to simmer for another 15 minute’s.

Lastly with a hand blender blitz the vegetable and serve.

Note. This can be kept in the fridge for up to 3 days or in the freezer for 6 months.
