These Tutti-Fruitti rice cakes are a  deliciously fruity snack to keep your macros on track

So with the recent launch of Jelly Belly Clear Whey, it’d have been rude not to come up with some sort of rice cake recipe to celebrate.

Seriously, rice cakes are a contender for snack of the year, and this recipe is perfect injecting flavour into a calorie deficit.

Load them up with toppings or break them up to make a rocky road. Either way you’ll be satisfied.

Instructions

1.

Heat a saucepan over a medium heat and add the strawberries.

2.

As the strawberries begin to soften, stir them around in their juices.

3.

Once the berries have softened to the point of falling apart, use a potato masher or fork to break them up even more.

4.

Let the mixture come to a slow boil, stirring continually. Once you see big bubbles breaking the surface, add the Clear Whey.

5.

Continue stirring the mixture over low heat for about 15 minutes and then remove the pan from the stove.

6.

If you prefer your jam with small chunks of fruit in it, then you’re done! Simply pour the mixture into a mason jar and cover it tightly with a lid.

7.

If you prefer a smoother texture, feel free to add the jam to a blender and pulse a few times before pouring it into a mason jar.

8.

Spread onto rice cakes and put in the freezer until hardened.
