To make these chocolate mini protein muffins you’ll need:
25g Myprotein chocolate smooth Vegan Blend
15g cocoa powder 15g coconut flour
1/4tsp Myprotein Psyllium Husk
1/2tsp baking powder
Pinch Myprotein Xanthan Gum
3tsp Truvia/sweetener of choice (to taste)
60g quark 60ml
Almond Milk 50ml
egg white/1 egg
1tsp oat flour (optional)
1) Preheat the oven to 180C
2) Combine the dry ingredients in a bowl and mix well.
3) Add the wet ingredients and blend with a hand blender to form a smooth batter.
4) Divide the batter between 11 mini muffin cases and sprinkle the oat flour on top, if using.
5) Pop into the oven for 15-20 minutes until done. Allow to cool in the cases, and enjoy!
Macros (1 mini muffin): 25kcal; 2.8g carbs; 3.2g protein; 0.6g fat; 1g fibre
