Still looking for new innovative ways to enjoy your 5-a-day? Nutrition really couldn’t be simpler with our range of recipes and this zucchini boat recipe is a low carb, low fat vegetable side that’s perfect to accompany any meal, or great to just enjoy on its own!
The Recipe is easy and can be made more adventurous depending on the curiosity of your taste buds! But here’s initially what you’ll need:
2 medium tomatoes, fresh or tin plum.
½ a white onion
1 clove of garlic
3 broccoli florets (I used defrosted frozen for quickness)
2 cauliflower florets
2 tablespoons of tinned or frozen sweet corn
2 tablespoons of tomato puree
Pre Heat your oven to 200 degrees celcius.
Then start, by slicing your courgette into tow, directly along the middle.
Using a teaspoon, empty the centre of the courgette removing and binning the middle pulp bit… this will form the “boats”.
Chop your tomatoes, garlic, onion, broccoli and cauliflower into small and fine pieces and mix in a small bowl with sweet corn.
To this mix add two table spoons of tomato puree, salt, pepper and any other spices you like! With a spoon make sure all the ingredients are mixed together.
To the middle of your zucchini boat add your vegetable and tomato mix.
Sprinkle on a little bit of mozzarella cheese if your vegetarian, or vegan cheese if your vegan.
Place your zucchini boats in the oven for around 20 minutes, remove and serve on the side of your favourite main course!
