If you’re a vegetarian sometimes reaching your protein intake can be hard! That’s why we’re getting creative in the kitchen with some vegan recipes, so you can receive the right nutrition!
This veggie burger is super easy to make and is great for a quick on the go meal.
So here’s what you’ll need to get started!
Half a tin of red kidney beans
Half an onion
1/3 of a pepper
Fresh herbs, garlic, salt and pepper
50g of cooked quinoa
20g of oats or oat powder
Cook your Quinoa as suggested on the packaging, this usually included boiling and simmering for 15- 20 minutes.
Add your kidney beans to a food processor and blend.
Once blended add you cooked quinoa, oats, vegetables, seasoning and egg and stir in or pulse using the food processor.
To a large pan add coconut oil or lightly spray with low calorie oil spray.
Shape your veggie burger mix into round patties and place in the pan. Cook on a medium heat for around 3 minutes, flip the burgers and allow to cook until brown.
Serve your veggie burgers on a bed of spinach or salad, add a spoonful of salsa and enjoy!
