Once you have made this Turkey Meatloaf I promise you will not be disappointed!

In addition - the quick and easy onion chutney to accompany it you will really feel like your indulging yourself. Made in bulk a great time saving recipe too!

 

Ingredients

 

Ingredients

  • 900 g Minced turkey
  • 2 handfuls of chopped spinach
  • 150 g Rolled oats
  • 1 Garlic Clove
  • 1 Large Onion
  • 2 stalks of celery
  • 1 Leek
  • 1 Egg
  • 1 tsp Salt
  • 1 tsp Pepper

 

Method

 

a) Finely chop the garlic, onion, celery, Spinach and leek all to a similar size mix together with the turkey, oats, egg, salt and pepper.

 

b) In a baking paper lined loaf tin pour in the mixture and press down to compacted in the tin, place over some tin foil to retain moisture.

 

c) Cook on 190C for 30 minutes then remove the foil and cook for a further 5 minutes.

 

d) Once brown on top remove from the oven and leave to cool

 

Storage

 

This meatloaf will last up to 5 days in the fridge, you can also cut the meat into slices wrap in cling film and freeze taking out one each evening and leaving in the fridge it will be ready to eat the next day. Will last 3 months in the freeze.

 

 

Onion Chutney

 

Take 1 large white onion thinly sliced put in a pan with a couple of 1 cal sprays put on the lid and slow cook on a medium heat until the onions are soft.

 

Next add to the pan:-

1 Tsp – wholegrain mustard

1 Tsp – Soya Sauce

1 Tsp – Vinegar

1 Tsp – Honey

 

Mix altogether and pour into an air tight container and will last up to 5 days in the fridge.
