Forget the usual high carb, low protein rice stuffed peppers and get your head around this high-protein low-carb alternative using protein rice!

Ingredients

  • 1 bag protein rice
  • 1/2 tin chopped tomatoes
  • 2 bell peppers
  • 2 broccoli florets
  • 1/2 onion
  • 1 clove garlic
  • 50 g sweet corn
  • To taste: Italian Seasoning, salt and pepper

Preparation

This recipe is so simple to make and creates the ultimate post-workout dinner full of protein and vegetable goodness!

Instructions

1.

Preheat your oven to 180 degrees Celcius.

Boiling your protein rice for around 9 minutes.

3.

Slice the tops of each of your peppers and cut out the insides and seeds. Chop your onion, garlic and chosen herbs.

4.

In a dish, mix your chopped up vegetables, seasoning and sweetcorn with half a tin of chopped tomatoes . For a thicker sauce, add a tablespoon of tomato puree.

5.

When your rice is ready, remove the bag from the water or drain the rice. Allow it to sit for a couple of minutes and then add it to your tomato and vegetable mixture.

6.

Spoon your stuffing mixture into each bell pepper, top with cheese if desired and add to the oven for 30 minutes.
