If you’re in need of a low calorie healthy light lunch, or are in need of some vegan and vegetarian protein options this recipe is perfect for you! Whether you’re looking to burn fat, lose weight or generally just enjoy some fresh tasty food try out this quinoa salad recipe!
With barely any cooking involved you can enjoy this meal within 15 minutes, here’s what you’ll need:
80g of quinoa
25g of sweet corn
Half a pepper
¼ of a cucumber
½ a red onion
1 small clove of garlic
Half a tin of white kidney beans
Herbs, Salt and Pepper.
Cook 80g of dry quinoa in boiling water on a medium heat for 15- 20 minutes, or as directed on the pack.
Chop up all your vegetables into small chunks/pieces and finely chop your garlic.
Once cooked, leave your quinoa to stand for 5 minutes ensuring all water has been absorbed.
Add in your vegetables, garlic, herbs salt and pepper with a small spoon full of olive oil and mix thoroughly.
Trying adding to a bed of lettuce and spinach with some vegan cheese and enjoy!
