Lemon Drizzle Muffins
Here we have a Soft, Light, Moist Lemon drizzle muffin with added Protein and 1g of Sugar AND tastes amazing!!
Ingredients
You will need:
Granulated sweetener - 16 g
Self-Raising Flour - 125 g
Baking Powder - 5 g
Lemon Juice – 30ml
Honey - 1 Tbsp
My Protein - Coconut Oil (Cocupure) - 90 g
3 Eggs
Semi-skimmed Milk - 100 ml
24 Cup Cake Papers
Rind from 1 Lemon (Optional)
Method
Start by adding the coconut oil to a bowl and melt for a few seconds in the microwave
Add all dry ingredients - Granulated sweetener, self-raising flour, whey protein, baking powder and lemon rind, mix together
Add the 3 eggs and milk beat together until all is mixed well (if mixture is very think add more milk)
Put a table spoon of the mixture in each case and bake in the oven on a medium heat (180 degrees) for 12 to 15 minutes until lightly golden.
Next
Once cooled, stab 4-5 times with a stew, put the lemon juice, honey and 1 tbsp of sweetener and heat in the microwave for 10 -15 seconds then while still warm, spoon the mix a table spoon at a time onto each cake.
