Here is a deliciously moist Clean Eat Low Sugar Christmas Cake. With your average Christmas cake being 350 calories and 41g sugar per serving give our recipe a try with only 3g of sugar and 102 calories per slice, you will have the festive treats without the Christmas bulge!

 

Ingredients

 

200g – Wholemeal strong flour

50g – Self raising flour

15g – Sweetener

3 – Eggs

30g – Cocao powder

1 Tsp – Baking Powder

50g – Butter/ Coconut Oil

1 Tsp – All spice

50ml – Almond Milk

20ml – Orange Juice

25g – Mixed fruit and Nut

15g – Hazel Nuts

25g – Flaked Almonds

5 – Soft Dates

1 Tbs – Cinnamon

 

Method

 

a) Start by putting the fruit and nut mix along with soft dates in a bowl pour over the orange juice.

 

b) Put all your dry ingredients into the bowl, flours, sweetener, coco powder, baking powder, all spice and mix together.

 

c) Add melted butter, eggs, Almond milk, stir together and add to the rest of the mixture.

 

d) Add the fruit and left over orange juice plus all the nuts and pour into a baking paper lined or greased tin and cook for 20-25 minutes on 180C.

 

Once cooked place on a cooling rack and dust with cinnamon.
