Zingy Honey Lime Coconut Oil Dressing | Healthy Fats

Who knew you could make a healthy dressing with coconut oil? All you need is a fork and a bowl – easy!

Rich in medium-chain triglycerides (MCTs) and never hydrogenated, bleached, refined or deodorised, Coconpure should be your go-to oil for dressings, frying and baking.

Servings: approx. 25

Ingredients

75ml Coconpure (melted but not hot)75ml extra-virgin olive oil50ml honey50ml apple cider vinegarJuice and zest of half a limePinch salt

Method

#1 Combine all ingredients except the oils and whisk until combined (you can do this with a fork if you like)

#2 Next, slowly pour in the oils whilst whisking until smooth and creamy

#3 Drizzle over your favourite salad or refrigerate until you need it (it will set a little in the fridge. Just place microwave briefly until it’s liquid again)
